FIRE SAFETY ADVICE FOR RESTAURANTS:
Following a recent spate of fires in restaurants in the Soho area, involving extract ducting from cooking appliances, the Brigade would like to offer advice on Fire Safety matters to local restaurant owners and managers.
Many fires in restaurants are the result of poor cleaning and maintenance of extract filters on cooking appliances and extract ducting. The build-up of fat and grease within extract filters, and within the extract ducting, may lead to a fire if they are not regularly cleansed and inspected.
- The Fire Safety Department advises that:
- Extract hood filters should be thoroughly cleaned and degreased daily, or more frequently if the cooking involves fat frying.
- Extract ducting should be professionally cleaned and degreased at regular intervals, not more than six monthly, or more frequently where heavy use dictates.
- The extract hood filters SHOULD NOT BE REMOVED whilst the cooking appliance is being used. This will safeguard against the build up of excessive grease within the extract ducting.
In addition, the Fire Safety Department advise that fan assisted extract units fitted in lavatories and washrooms should be regularly cleaned and maintained. Failure to regularly clean dust from the units may lead to overheating and a fire.
